First dates are hard enough without worrying about conversation. Deciding on the first date location, like a restaurant or zoo, or choosing the appropriate wardrobe, like casual or dressy, can take days if you care enough. Sometimes, the last thing you think about is what you're going to talk about. That's what the internet is for!

I'm not really a small talk type of person, so maybe something along the lines of "If money wasn't an issue, what would you be doing right now?".
Follow Up Is Key...And So Is Counting
Ask about their favorite things (movies, books, shows, games, etc.) then ask what they like about those things.
Ask about their dreams (jobs, vacations, homes, etc.) then ask why they want to do/have those things
Then, and this is the most important question, you gotta ask how many nipples they have. If they say more than two, they're a witch and must be burned at the stake.
Then ask them what date and time would be best for them to be burned at the stake, It's important to respect their schedules.
Make It All Up For Fun
Something fun I did when I was single/dating
I would play this kind of game with my date where we would make up a story for each other. By this I mean I would start and say something like "well how do you enjoy being a crayon creator" or something similarly as simple/ dumb. The fun in the game is how far you can take it while remaining perfectly serious and talking just loud enough for people around you to hear also because obviously people are nosey in general.
I was once at a really nice dinner where the average clientele age was like 50+ and we were 25. She asked "So you're an App developer and influencer, how does that work exactly." That was a fun one. We ended up riffing for like 30 minutes just about some fake life I had and the old couple next to us kept tossing glances of interest/ being impressed. She was a Starfish breeder in the story.
Im a kind of weird guy and im pretty social so I enjoy someone whose able to riff and not take themselves seriously. Some people would have been pretty off put by this though (and have) but if youre trying to date someone you might as well like them too, right?
Tell A Story Together
If you're at a place like a bar, play a people watching game where you try and come up with backstories for other people in the room. It can be a lot of fun and takes some of the pressure off, while getting you two talking to each other and getting a feel for each other's sense of humor/personality.

Not so much a conversation starter, but something to help guide a conversation - pick up on something they've mentioned related to the topic at hand and ask more questions about that, specifically, open ended questions.
For example, if discussing study, ask about favourite topics, might offer some insight about what they enjoy. If it's history, ask about what about it they enjoy, might lead you to asking about preferred era or something. Example is kind of limited, but the principle is still relevant.
